Back to School Freezer Friendly Egg Bites

What you’ll need:

7 eggs
¼ cup milk
salt and pepper
2-3 pieces bread
shredded cheddar cheese
Jimmy Dean sausage
bacon
red peppers or veggie of choice (optional)

How to make Back to School Freezer Friendly Egg Bites  :

  1. Preheat oven to 350 degrees, and line the cups of a muffin pan with silicone muffin liners. – I chose to use silicone pan vs liners.

  2. Place chopped bread pieces at the bottom of each muffin cup. Top with a scoop of sausage or bacon and a generous sprinkle of grated cheddar and any veggies (optional).

  3. In a medium bowl, mix eggs, milk salt, pepper. Whisk until yolks are fully incorporated. Evenly pour egg mixture into muffin tin cups.

  4. Bake for 25-30 minutes. Broil the last 1-2 minutes so the cheese is golden and bubbly. Serve immediately or freezer for later use.

If you choose to freeze, use freezer bags.  I used a vacuum sealer and it will last up to 3 months.

To reheat place in Refrigerator overnight and then open and heat 30 – 60 seconds until you hit desired temp.

Enjoy!
