One Pot Chicken Fajita Pasta 

What you’ll need: 

3 tablespoons olive oil
2-3 chicken breasts, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 yellow onion, sliced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
5 cups milk
4 cups penne or rigatoni pasta 
1 cup pepper jack cheese, shredded

How to make One Pot Chicken Fajita Pasta :

  1. Heat the oil in a large pot over high heat.

  2. Add the chicken and cook until no longer pink, 7-8 minutes, then remove from the pot and cut up into chunks 

  3. Slice and add the bell peppers and onion and cook until the onion is translucent, about 6 minutes.

  4. Add the chicken back to the pot, along with the salt, pepper, chili powder, cumin, and garlic powder, and stir until evenly coated, about 30 seconds.

  5. Add the milk and the pasta, stirring constantly to prevent the pasta from sticking.

  6. Cook for about 20 minutes, until pasta is tender and the milk has reduced to a thick sauce that coats the pasta.

  7. Add the cheese and mix until melted.


    Serve with bread and salad and done!
