Smoked Chicken Salad

What you’ll need:

2 large chicken breasts chopped to make roughly 4 cups (or buy a rotisserie chicken)
2 eggs
3/4 cup of mayo
2 tablespoons of mustard
2 tablespoons of dill relish
Salt and pepper to taste
Cavenders seasoning to taste
Worcestershire sauce (for chicken marinade)
Meat Church’s Blanco rub — or the Jalapeño Blanco if you want heat (for chicken marinade)

How to make the chicken :

  1. If smoking or grilling your chicken- marinate the chicken breasts in Worcestershire sauce and season with Meat Church’s Blanco or jalapeño Blanco.

  2. Smoke on any smoker or grill at 220°F with extra smoke to build a good base.

  3. Once you’ve got a solid smoke flavor, bump the heat to about 385°F and cook to an internal temp of 165°F or higher.

  4. Pull the chicken and let it rest and chop into small pieces with a cleaver.

    Mixing it all together:

Boil the eggs and then let them cool, grate them into a bowl along with the other ingredients- mustard, mayo, dill relish, salt and pepper to taste and Cavenders. Mix it all together and fold in the chopped chicken. Chill and serve with crackers or on toasted white bread! We eat it for days - so so good!!

Enjoy!
