Chicken Broccoli Orzo Casserole
What you’ll need:
3 cooked chicken breast, diced or shredded (could use a rotisserie chicken if short on time). I just sautéed mine in butter and cavenders
1 cup dry orzo pasta
3 cups broccoli florets, chopped
1 cup chicken broth
1 cup milk
1 cup sour cream
2 cups freshly shredded sharp cheddar cheese, divided
½ cup grated Parmesan cheese
1 tsp garlic powder
½ tsp onion powder
½ tsp paprika
Salt and black pepper, to taste
1 cup crushed Ritz crackers
How to make Chicken Broccoli Orzo Casserole :
Preheat the oven to 375°F and grease a 9×13-inch baking dish.
Bring a large pot of salted water to a boil. Cook the orzo for 6-8 minutes. Add the broccoli during the last 2 minutes. Drain if not cooked down and set aside.
In a large bowl, whisk together chicken broth, milk, sour cream, 1 cup cheddar cheese, Parmesan, garlic powder, onion powder, paprika, salt, and pepper.
4. Stir in the cooked chicken, cooked orzo, and broccoli. Pour into the prepared baking dish.
5. Sprinkle with the remaining 1 cup cheddar cheese and crushed crackers.
6. Bake uncovered for 20 minutes, until hot and bubbly.
7. Let rest for 5 minutes and serve.
